Job Description

Cutting and trimming 
 
  • Cut, trim, and mince meat
  • Debone and portion meat
  • Cut carcasses into smaller portions
Preparing meat 
 
  • Season, smoke, or marinate meat
  • Process meat into smallgoods and other meat-based products
  • Weigh and price meat
  • Wrap and package meat
Preparing displays 
 
  • Prepare in-store meat displays
  • Shape, lace, and tie roasts and other meats
Advising customers 
 
  • Discuss different cuts of meat with customers
  • Explain how to cook and safely store meat
Maintaining safety and hygiene 
 
  • Maintain proper food safety and hygiene standards
  • Keep their working environment safe
  • Store meat in accordance with health and safety legislation
Managing inventory 
 
  • Manage inventory, keep records of sales
  • Determine amount, product line, and freshness of products
Negotiating with suppliers Collaborate with procurement to source the highest quality meats and Maintain supplier relationships. 
 
Training and mentoring 
 
  • Lead, mentor, and train a team of butchers
